Zucchini Patties

What You'll Need
2 cups grated zucchini
2 eggs, beaten
¼ cup chopped onion
½ cup Toro™ Celiac-Safe™ White Bread Mix
½ cup shredded mozzarella cheese
2 T vegetable oil
½ cup grated Parmesan cheese
Salt and pepper to taste


Preparation

  1. In a medium bowl, combine all ingredients, stirring well enough to distribute all ingredients evenly.
  2. Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

Serve with sour cream, salsa, tomato sauce or whatever topping you choose. Enjoy!
