Jenny's Story

ImageMy Diagnosis:
In 1993, I was diagnosed with celiac disease. My doctor recommended I follow a 100% gluten-free diet, which sounded relatively easy when he explained it to me. Just don’t eat gluten, right? But as you know it wasn’t that easy. I was shocked to discover how challenging it really is to avoid the gluten hidden in everything from salad dressings to deli meat. Cutting gluten out of my diet gave me immediate health benefits, though, so I committed myself to reading labels and changing the way I eat.

My Reaction:
I went right out and bought all the gluten-free breads and baking mixes I could find. And I was horribly disappointed with each one. They were either heavy and wet or they had a strange texture or they left a horrible aftertaste. So I switched to plan B: I eliminated all breads from my diet and I stuck to corn, potatoes and rice. As I’m sure you know, my limited options made enjoying meals difficult … and they made eating at restaurants almost impossible.

My Saving Grace:
A few years later, my mom and I were preparing to visit some friends in Norway. As I explained my weird dietary restrictions to them over the phone, I was surprised to learn they knew all about gluten intolerance … and how to make delicious foods that were celiac-safe. They explained that people of Scandinavian origin are more prone to celiac disease, and bakeries there had long ago perfected the art of making delicious celiac-safe bread products. We also found out that in Europe, celiacs consider a gluten content of less than 20 ppm gluten to be gluten-free, and that they had been eating these products safely for nearly 30 years!

As with any medical questions or concerns, you should first start by talking to your doctor. There are several tests that can be run to rule out many issues that will help you to find a proper diagnosis for your son.

If there is a retailer in your area that you believe would be interested, let us know. And yes, our sponge cake is fabulous, and can make so many yummy desserts (cupcakes and poppy seed bread are my favorites!).

I live in a very small town the closest health food store is over an hour away even then they're selections are limited, so i will try ordering prodects through the internet , my only concern is that they wont taste good then i'm stuck with an expensive product i don't like.however your prodect does sound yummy!!

To answer about Sainsburys and Tesco - yes they both have lines in the stores of gf shelf stable baked goods, mini cakes, cookies, crackers, etc. Tesco is also opening this year in CA so that might be a great option for Celiacs out there to have even more European products to choose from. I might have a freind out there send me care packages of gf stuff, if Tesco opens near her in the northern part of the state.

My only experience with gluten-free shopping in Europe was in Norway. There were definite gluten-free sections in the grocery stores--even 15 years ago. Of course, I had the help of my foreign-exchange family taking me around to show me what Norway had for celiacs. My biggest memory though was seeing signs in bakery windows advertising that they had gluten-free bread. We even took my picture in front of one of the bakery windows! I just couldn't believe it.

you say that they are labled gluten-free? How did you know what to look for? Did they have them in bakeries or
main stream stores like Tesco or Sainsbury?

I am SO excited to find out you're bringing these products to the USA! I had shelf stable gluten free baked goods in France and London on vacation and I could not believe how fabulous they were. I'm sure these mixes will be similar which means they'll live up to the name 'tastes like real food'!
